Fun recipes for the warmer weather!
Keverne's White Bean Salad:
1 can white beans (or cook 2 cups of raw ones)
fresh parsley and basil - chopped (a handful of each)
1/2 fresh zucchini - chopped
2 huge slices of red onion - chopped
ground pepper and sea salt - sprinkle to taste
white wine vinegar and balsamic vinegar - I just pour in a semi-circle in the bowl of each (about 1/2 tbsp)
olive oil - pour in a circle (about 1 tbsp)
feta cheese - chopped
shredded asiago (optional)
Drain beans and rinse with water if canned. In a large bowl, add chopped items, drizzle and swirl the vinegars and olive oil. Mix. Taste to check seasonings. Add feta.
Pecans would also be fun in this salad and it's perfect at a barbeque! (and good for you too!)
